Everything I've seen of working in a professional kitchen (which is basically bits of Masterchef, Ramsay's Kitchen Nightmares and similar) suggests that working in a professional kitchen is chopping all day until it's time for someone to shout at you.

I've never worked in a professional kitchen (or indeed as a waiter). It always seemed hard work.
